Corn and pea fritters

Ingredients

corn flakes 70 g
whole eggs 6
green blanched peas 100 g
blanched baby corn sliced 50 g
chives finely sliced ½ bunch

brown sugar

10 g
olive oil 10 ml

Preparation

  1. Whisk the eggs with sugar.
  2. Add chives, peas, cornflakes and baby corn.
  3. Let rest for 15 minutes.
  4. Using a soup spoon, portion mix into a preheated fry pan that is lightly coated with olive oil.
  5. Cook slowly until edges turn golden brown then turn over.
