Sunflower seed coated whiting

Ingredients

whiting filets 900 g
whole egg 1
sunflower seeds 200 g
flour 20 g
olive oil 20 ml
bunch of dill 1
whole lemon cut in 6 wedges 1
large potatoes 6
Pepper to taste  
light natural yoghurt 200 g
bunch of chives 1

Preparation

  1. Whisk the eggs until smooth for «crumbing».
  2. Dust the fillets with flour both sides, pull through the eggs and dip the side with no skin in sunflower seeds.
  3. Chop dill and mix with yoghurt.
  4. Pan fry in some olive oil, side with seeds down first. Panfry until golden then turn over for 1 minute until fully cooked.
  5. Serve with lemon wedges and boiled potatoes. Finish with chives or just with a fresh summer salad.
