Inspired by the Scandinavians, the master chef refines his dishes with essences and preserves. That's why his store cupboard contains colourful preserving jars filled with white wine vinegar, pumpkin in elderflower syrup and lemons cured in sugar and salt. A feast for the eyes that becomes a feast for the palate.
