Mug cakes with white chocolate and dried apricots

125 g butter
75 g white chocolate
½ dl limoncello
150 g sugar
1 knife tip of salt
2 egg yolks
2 egg whites, stiffly beaten
175 g flour
1 tsp baking powder
50 g apricots, dried, chopped
Heat the butter, chocolate and limoncello, stirring all the time, until the mixture is smooth. Add the sugar, salt and egg yolks and mix well. Combine the flour and baking powder and fold gently into the mixture along with the egg whites and chopped apricots. Pour the mixture into the mugs and place them onto the baking tray. Put the tray into the cold cooking space. Bake.
Hot air 180°C for 30 Mins
  • 6 greased mugs (approx. 1.5 dl volume)
