Baked apples with hazelnuts, raisins and honey

Ingredients

4 apples, e.g. Boskop, Jonagold, Cox’s Orange
100 g hazelnuts, ground
50 g almonds, ground
½ dl milk
4 tbsp raisins
1 sachet of vanilla sugar
½ lemon, grated zest and juice
2 tbsp honey
2 tbsp sugar
1 dl apple juice
Wash the apples. Cut a 2 cm «lid» off the top of the apples and remove the core. Hollow out the apples to a thickness of about 2 cm. Finely chop the hollowed-out flesh and put to one side.
For the filling, roast the ground hazelnuts and almonds in a pan. Mix together with the chopped apple flesh and all the other ingredients.
Put the hollowed-out apples in the porcelain dish and fill them with the mixture. Put the lids back on and pour the apple juice into the porcelain dish. Place the porcelain dish on the wire shelf in the cold cooking space and bake.
Hot air + steaming 190°C for 20 Mins

Tips

Serve with vanilla custard.
