Chicken lollies

Preparation

50 g raisins
½ dl white wine
300 g chicken breast
1 dl cream
salt
black pepper
3 tbsp herbs, e.g. coriander, flat-leaved parsley, chervil
Soak the raisins in white wine for several hours.
Cut the chicken breast into strips and place together with the cream into the freezer for about 15 minutes. Then purée both together until a homogeneous mass results. Season well. Using wet hands, form into balls and press a few raisins in the centre of each one. Put the balls in the perforated cooking tray.
Finely chop and mix the herbs. Dip the tip of the lollies into the herbs and stick them on a skewer.
Steaming 95°C for 10 Mins
