6 Egg whites, large
300 g Caster sugar
1 pinch of salt
½ tsp Cornflour
½ tsp White vinegar

Topping

3 Kiwis, sliced
1 punnet of strawberries, sliced
1 punnet of raspberries
1 Banana, sliced
2 passion fruit, pulp
300 ml Thickened cream, whipped to serve

Preparation

Whisk egg whites and salt until peaks form, gradually adding sugar whilst continuously mixing. Finally, add cornflour then vinegar.
Mark a 25 cm diameter on baking paper, and line tray with it.
Using a rubber spatula, pour the mixture into the circle, making sure to create lots of peaks. Put the tray into the preheated cooking space. Bake (step 3).
Cover the surface with whipped cream and garnish with sliced fresh fruit and passion fruit.

Cooking steps

(Pre-)heat cooking space to 180°C with Hot air
Put the food in
Hot air 110°C for 50 Mins
