Summer salad with marinated watermelon, roasted cherry tomatoes, feta, cucumber and bilberries

Salad

½ watermelon, small
½ lime, grated zest and juice
1 tsp brown sugar
3 sprigs of mint
250 g cherry tomatoes
3 tbsp sugar
200 g feta
1 cucumber, small
100 g bilberries

Sauce

Olive oil
Balsamic vinegar
Salt
Pepper
½ lime, juice

Preparation

Put the sliced watermelon, lime zest and juice, brown sugar and a sprig of mint into a vacuum bag and vacuum seal it on level 1. Leave to chill in the refrigerator for at least 2 hours.
Dice the feta and cucumber and finely chop the rest of the mint. Mix everything with the bilberries.
For the sauce, mix all the ingredients together and put to one side.
Wash, halve and place the cherry tomatoes on the lined tray. Sprinkle with sugar. Put the tray into the cold cooking space. Bake.
Stir the baked cherry tomatoes and marinated watermelon into the feta, cucumber and blueberry mixture. Arrange on plate and drizzle over sauce.
