Steamed Chicken with Wolfberries

30 g Wolfberries, dried
1 kg Chicken thighs, skin on, bones in
1 l Chicken stock
½ tsp Sesame oil
1 Yam, diced
10 g Ginger, sliced
3 Cloves of garlic, sliced
2 Star anise
3 Shallots, cut into 2 cm pieces
1 tsp Ground white pepper


Soak wolfberries in cold water until soft.
Blanch chicken for 5 minutes, this will prevent impurities later in the broth.
Place chicken pieces, stock and all other ingredients in white ceramic dish. Place the dish on the wire shelf in the cold cooking space. Steam.
