Apple bread and butter pudding with black tea sauce

Sultanas

50 g sultanas
½ dl rum
350 g bread, from the day before
750 g apples, peeled, deseeded, coarsely grated
1 lemon, zest and juice
40 g flaked almonds
25 g butter
Icing sugar

Black tea sauce

4 dl milk
1 cinnamon stick
1 tsp black tea
80 g sugar
2 egg yolks

Sauce

2 eggs
2 egg whites
2 dl double cream
3 dl milk
70 g unrefined sugar
1 tsp cornflour
1 tsp cardamom
1 tsp cinnamon
1 pinch of ground cloves

Preparation

Soak the sultanas in rum overnight. Cut the bread into small thin slices, mix the apple with the lemon juice and spread everything evenly in the porcelain dish.
For the black tea sauce, put all the ingredients into a vacuum bag and vacuum seal it without sucking out the liquid. Place the bag in the perforated cooking tray. Steam (step 1).
For the sauce, stir all the ingredients together well and pour over the apple and bread mixture. Put the dish on the wire shelf in the cold cooking space. Bake (step 4). Spread the flaked almonds and butter over the pudding. Bake (step 6). Serve the pudding warm with the sauce.
