General: Can an existing cooker or oven be replaced with a steamer?

The CombairSteamer fits best in an existing niche (762 mm) for a standard oven or cooker. These appliances combine a complete oven and steaming functions. CombairSteamers offer all the steaming programmes of a steam cooker and the classic functions of an oven – such as hot air, top/bottom heat and grill. If expanding the niche is possible, we recommend the classic combination of a 45 oven and a 45 CombiSteamer, allowing you to benefit from the flexibility of having two cooking chambers.

General: Do I still need an oven if I have a steamer?

V-ZUG steamers make for ideal additional appliances. This means you can always enjoy the benefits of having a steamer: You can prepare a delicious gratin or a piece of meat with automatic soft roasting in the oven, while the steamer handles ingredients such as rice, vegetables or an exquisite dessert. Stress-free cooking guaranteed.

General: What are the advantages of having a steamer?

A steamer allows for gentle steam cooking that does not wash out valuable vitamins, minerals and flavours from your food. The unpressurised steaming process operates at temperatures between 30 and 100 °C to enable simple, precision cooking. A smart climate sensor allows the food to be steamed in the best possible conditions, regardless of the amount. The colours are preserved perfectly. Ideal for a healthy and balanced diet.

Energy consumption: What about the consumption values / energy efficiency of ovens and steamers?

Our cookers, ovens and steamers are all classified in the most economical energy efficiency class A.

Functions: Why is it important to have a selectable temperature range?

A freely selectable temperature range between 30 and 100 °C allows for complete freedom while cooking. After all, a delicious caramel flan will only be the perfect consistency if it is steamed at exactly 90 °C. Fish is best poached at 80 °C and, if you want to make your own yoghurt, 40 °C is the temperature you need. Precise temperature settings are also essential for the Vacuisine function, which allows for slow cooking at low temperatures (lower than 100 °C) in vacuum-sealed pouches. Professional chefs call this method of cooking «sous vide».

Functions: What is the «professional baking» function used for?

Bread, rolls and plaited loaves can be achieved at the push of a button using the professional baking application, delivering bakery-level quality. The application provides support right from the process of the dough rising and creates the perfect environment for making the dough ready to bake in the shortest possible time. The combination of hot air and steam keeps the food from drying out while baking and achieves a golden-brown surface. It allows puff pastry dishes to achieve a highly aerated finish.

Functions: What is the V-ZUG BakeOmatic?

Whether it’s your own creation, something spontaneous or a recipe from a book, everything is fully automated! With the V-ZUG BakeOmatic, there is no need to enter the cooking duration, temperature, operating mode or weight manually. Whether it’s a carefully thought out menu for guests or something you’ve thrown together using ingredients from the garden, refrigerator or pantry, the BakeOmatic always delivers quick, simple and tasty results. Thanks to unique sensor technology in the climate control system (CCS) with active ventilation flap, your cooking chamber will reach the ideal conditions for your dish. Your steamer or oven will automatically detect the weight and size of the dish and will select the best sequence of the various operating modes with exactly the right temperature and duration. What’s more, you can find out exactly when the dish will be ready just moments after you begin.

Functions: How does the steam operating mode work?

The cooking chamber is heated simultaneously by steam and hot air. The food is heated up or cooked by steaming. This feature is suitable for cooking vegetables, rice, cereal products, pulses and egg dishes, for poaching meat, fish and poultry, for making yoghurt and for sterilising. To keep cleaning to a minimum, it is best to slide the stainless steel tray under the perforated cooking tray and collect the small amount of residual water in it.

Functions: How does the regeneration operating mode work?

The cooking chamber is heated by steam and hot air. The food is reheated gently without drying it out. This feature is suitable for reheating cooked food or for cooking convenience products and ready meals. Regeneration can be carried out simultaneously on several levels with no flavour transfer.

Functions: How does the hot air operating mode on the steamer work?

A heating element behind the hot air diffuser plate heats up the air inside the cooking chamber, which is circulated evenly. The feature is suitable for cakes, biscuits, bread and roasted meat on two levels. Set the temperature approx. 20 °C lower than for top/bottom heat.

Functions: How does the hot air humid operating mode on the steamer work?

A heating element behind the hot air diffuser plate heats up the air inside the cooking chamber, which is circulated evenly. Any moisture escaping from the food is kept to a minimum within the cooking chamber. The food retains its moisture. The feature is suitable for gratins, casseroles, bread and yeast pastries on two levels.

Functions: How does the hot air with steaming operating mode work?

A heating element behind the hot air diffuser plate heats up the air inside the cooking chamber, which is circulated evenly. Steam is then introduced into the cooking chamber. The use of steam can improve heat transfer to the food. Incidentally, steam over 100 °C is not visible. The programme is particularly suitable for gratins, casseroles, meat, frozen products, chestnuts, puff and yeast pastry, bread and convenience products on 1 or 2 levels.

Functions: How do I achieve perfectly tender meat?

The patented automatic soft roasting mode guarantees automatic, dynamic control over the food probe temperature. The meat becomes tender, stays juicy and is perfectly cooked. Combined with the new three-point food probe, the meat is prepared to perfection at the push of a button – cooking it to exactly the right level so that it can be served when you want.

Functions/Cleaning: How much does the water tank hold and what is easiest way to clean it?

The water tank holds one litre of water, which is sufficient for different steaming periods and is dependent on the temperature and the nature of the food. With Vacuisine, it is possible to reach over 48 hours of cooking time without having to refill the water tank. The water tanks in the Excellence Line can be cleaned in a dishwasher.

Cleaning: Limescale deposits require a lot of cleaning – how do I deal with them?

The external steam generator ensures that the only thing that can get into the interior is steam. As steam doesn’t leave limescale residue, you don’t have to worry about this when using the V-ZUG steamer. Cleaning is made so much easier, as there’s no limescale to remove from the interior. What’s more, the water tank for the steamers in the Excellence Line has a perfectly smooth surface, which helps to prevent limescale deposits from forming.

Cleaning: At the end of the steaming process, does residual water not remain?

The external steam generator and the climate sensor ensure that only the required amount of steam can enter the cooking chamber. The steam that condenses on the food accumulates on the base of the cooking chamber as residual water. This residual water depends on the amount of food in the chamber, its temperature and the cooking time. During the cooking process, bottom heating evaporates the residual water. For a normal quantity of vegetables, the residual water on the bottom can usually be removed by wiping with a cloth. Where larger quantities of food, or frozen food, are concerned, the stainless steel tray under the perforated cooking tray helps to collect residual water.

Cleaning: Do the steamers have a cleaning programme?

The new Excellence Line steamers and combi-steam cookers can be cleaned with little effort thanks to the stainless-steel cooking chamber. Guided programmes remove the dirt automatically. For tough soiling, we have developed a special cleaning solution – the SteamerCleaner.

Cleaning: How are the external steam generators descaled?

The external steam generator indicates when it should be descaled. This is dependent on water hardness and the level of use. An automated descaling programme will guide you through the simple process.

Cleaning: How often should a V-ZUG steamer be descaled?

The descale indicator only appears every 6 to 18 months depending on water hardness and level of use. The descale recommendation will not stop you using the appliance – you can continue to use it and choose when you descale it. The automatic descaling programme reduces the effort required to a few simple steps.

Safety: Is there a safer and more convenient way of removing the baking trays from the baking or cooking chambers?

The optional fully extending runner allows you to remove up to three baking trays safely and conveniently from the baking chamber. This is particularly practical when basting a piece of meat or for removing biscuits or a flan from the baking tray.

Safety: Is there not a risk of burning yourself on the door front?

All appliances are guaranteed to have low external door temperatures. In the case of normal ovens and steamers, a triple-layer glass door ensures safe operation while cooking. Pyrolytic self-cleaning ovens actually have a four-layer glass door concept. Thanks to the innovative door concept in the Advanced and Excellence Line, the door is ventilated with air from the room, thereby keeping the temperature of the outer door lower than it is for the standard models. What’s more, active appliance door ventilation also enables lower outer door temperatures for pyrolytic self-cleaning appliances.

Technology: What are the advantages of the Electronic Steam System (ESS)?

The advantages are clear – efficient, powerful, finely regulated and fast steam build-up, quick climate change, needs-based consumption of water and energy, water is pumped back into the water tank after the cooking process, and no stagnant water remains in the pipes. Technology: Why is the interior of the V-ZUG steamer made from stainless steel?

Stainless steel is the only material that can be used for household appliances as it doesn’t rust when it comes into contact with water. All V-ZUG steamers are made with this material.
