Traybake with fruit

A light and moist traybake with seasonal fruit. A simple dessert that serves a crowd.

Combair V2000 from 2021

Dough

4 eggs

250 g sugar

1½ tbsp vanilla sugar

1 pinch of salt

1 lemon

grated zest and juice

100 ml cream

250 g butter

soft

300 g white flour

2 tsp baking powder

Traybake

300 g seasonal fruit

in pieces

icing sugar

for dusting

Dough

Place eggs, sugar, vanilla sugar and salt in a mixing bowl, then mix with the whisk attachment of a hand mixer. Then stir in the lemon zest, juice, cream, and butter. Add flour and baking powder, mixing into a smooth batter.

Traybake

Preheat the cooking space to 175 °C with hot air. Place the dough on the prepared tray, evenly spread the fruit on top, and press down lightly. Place the baking tray onto a wire shelf in the preheated cooking space and bake for approximately 45 minutes. Remove, allow to cool, then dust with icing sugar.

Preheating completed. Insert bakeware.

Tips

Replace 100 g of flour with 100 g of ground nuts, or fold in a little chopped chocolate or nuts into the batter. Whether berries, apricots, apples or rhubarb, this cake can be adapted to suit any taste.
